The work examines what is takes to grow, process and prepare the plant as food, focusing on low-tech cultivation and the development of a plant-based milk. The project centred on practical experimentation: cultivating, drying and processing duckweed; producing small batches of test milks; and organising tasting sessions that opened discussions about acceptance, sustainability and the cultural framing of plant-based milk. The work took place across the EnergieKas ponds and greenhouse, through expert interviews, in a small lab and kitchen setup, and during public tastings. Duckweed Dairy recognises food as a social and ecological network. By approaching duckweed as a local protein source, the project addresses issues of food safety, resource use and cultural perceptions of taste, while examining how this often-overlooked aquatic plant might inform new narratives about future nutrition. Energiekas provided essential support, including space, guidance and opportunities for collaborative exchange within their network of neighbours, gardeners, artists and researchers. Early advice from Studio Makkink &amp; Bey’s Waterschool helped shape the project’s initial direction. Historically, it has appeared in farming manuals as a source of livestock feed and in botanical records as an indicator of water quality. Protein Transition The protein transition describes the shift from animal-based protein sources towards more sustainable, plant-based alternatives. This shift is a response to pressures on land use, emissions from dairy and livestock, and the need for protein to be produced locally within European food systems. Experiments The experiments explored different ways of growing and preparing duckweed. A small growing station with various tubs and containers was set up on the rooftop of EnergieKas. Duckweed was collected from several locations and additional plants were purchased from an aquarium shop in order to compare the behaviour of plants from different sources. The water was changed weekly and the condition of the plants was observed. Different nutrient levels were also tested to see which supported better growth. Bruno Szenk built a simple rack for drying the duckweed, which could be spread out in a thin layer. Once dry, it was ground into a fine powder. Later in the process, the self-grown duckweed had to be excluded from tastings for safety reasons. Therefore, all edible tests used pre-milled, food-grade duckweed. A series of kitchen experiments was then carried out with this powder: it was cooked, steamed, baked and combined with different ingredients. The aim was to find a preparation that tasted pleasant and could be used as a plant-based milk substitute. Tasting As part of EnergieKas’ programme for the Spotlight Festival and Hoogtij, guided groups were invited to taste three versions of duckweed milk. These included a plain version made with only duckweed powder and water, a version blended with hemp seeds and a version prepared with hazelnuts. Visitors approached the tasting with varying levels of curiosity. Some were hesitant, taking only a small sip, while others were more adventurous, closely comparing the three versions. Many participants shared personal anecdotes about duckweed, ranging from childhood memories of ponds and gardening to professional experience in environmental or food-related fields. Others contributed professional insights from fields such as horticulture, ecology and nutrition. Integrating the representation of nature into legal systems, codes, and rituals serves as a visual tool that fits tradition and helps with the complex role of speaking for non-human beings. An increasingly common means of protecting nature is granting rights to natural entities. These enable beings to have legal standing, just like humans have. However, our legal system is tailored to humans. How can we bring nature to court? The project plays with the similarities between court hearings and plays, where costumes underline the role's character. In court, the lawyer represents the client. They are aware of the extent of the case and support the plaintiff in expressing themselves or speaking for them. However, in the case of an environmental law hearing, the client is not present. We will have mined every ounce of the phosphate mineral "apatite" by then. Phosphorus is an irreplaceable and essential fertiliser for industrial agriculture. Without it, plants cannot grow. You could say the agricultural industry has an appetite for apatite. Runoff from agricultural land contains high levels of this fertilizer, disrupting surrounding aquatic ecosystems and causing algal blooms. We need to reclaim this finite resource and reduce the amount of phosphorus in our waters. Its fuel: duckweed, and its tools: sewage treatment plants. Duckweed grows on nutrient-rich water and is excellent at binding phosphorus. It is also edible for humans. Apatite offers a pill made from duckweed that can be taken like any other pill. But unlike medicine, taking the Apatite pill does not heal our body but our ecosystem. The human digestive tract breaks down duckweed and releases phosphorus in the process. The phosphorus enters our sewage treatment plants via our sewage system. In the Netherlands, sewage treatment plants have developed systems that filter and recycle the phosphorus from the water. By connecting our bodies to the existing wastewater infrastructure, we can recover valuable resources and restore ecosystems. Because once phosphate is in the ocean, it is lost forever. symbols printed on the pack- aging that have little to no meaning for consumers; on the other hand, the figures about plastic recycling found on the internet are often confusing – or even contradictory. During my research, I noticed that lack of transparency. To get an overview of the landscape of recycling information I collected and archived my plastic waste for several days. The result was an archaeological catalogue which highlights and explains the symbols in question. Instead of being disposed of immediately, the plastic was thus given a place in the ever-growing archive of cryptic information; that exercise made me treat every piece of trash as a valuable piece of evidence. This project, among other research work by my colleagues, was published in a book com­missioned by Renewi, in which I also point out the problem of companies mitigating their real footprint with attractive data visualisations designed to appease the more conscious con­sumers. Now, under the same title and supervision of AMO members, the project is continued at DAE, where we were asked to challenge the notions of ‘nature’ and ‘countryside’. I was inspired by environmental personhood, a concept that explores the effects of granting human rights to non-human beings. From there, many questions arose: is it necessary to humanize non-human beings to develop a sense of responsibility? Is our understanding of nature fostered by human traits assigned to the environment? Are we only able to relate to nature by assigning it human traits? Inspired by the abrasion of frequently travelled paths, I designed tiles made from layers of differently coloured concrete. Over time and according to its usage, the tiles would reveal their layers and colours. Installed in a public space, they would be an ever-changing reminder of the marks we leave behind as a collective. An investigation of the healing effect of music therapy in elderly and nursing homes. The objects series Senos seeks to support the audible stimulation of music through a tactile experience. Experiments with the transmission of vibrations led to a series of gravity pillows filled with mung beans and a Bluetooth speaker. When music is played, the speaker emits pulses to the surrounding material, which are then transmitted to the recipients’ body. With this tool, I hope to give music therapists the means to research the effects of hearing a familiar melody and receiving coherent tactile stimuli.
